I have a pretty good sense of rhythm, so I've never really done badly at Rhythm Heaven. However, I DID have a problem with being a bit early to the beat like you, and I know how to stop it. If you ever see yourself being early like that again, try to hold off on the A button for just the slightest bit longer. As long as you can control that, you will get immensely better at this game (though I guess it's a Let's Fail so...)

Ah, Monkey Watch. Apparently a looooot of people have trouble on that level, and not many others. Here's a tip: if you fail Monkey Watch a couple of more times, go to the Café. The barista will take pity on you and beat it for you so you can get to the next minigame (which is Remix 2). I don't really have any advice other than that, so...
Also, that Perfect message you got at the end of the video relates to the medal system. Once you get medals on every game, Perfect opportunities will consistently pop up, allowing you to get rewards from getting Perfects very easily (before you have medals on every game, Perfect chances only pop up every once in a while). If you try for a Perfect, you have to get every input right (or be perfect ) in 3 tries.
